My plan is to run this thing as a media server and Usenet download bucket, among other things, via Docker. Maybe that's wrong? Is there an ideal drive size I should use? I have a small (80GB) HDD lying around that I can use for the system disk but it would make things so much easier to fill that drive bay with another 1TB HDD.

Is this method recommended? I've heard that running an OS from a USB drive shortens the lifespan of the drive.

As far as I've been able to scrape together, it's possible to install an OS on a USB stick plugged into the internal USB port (directly mounted to the motherboard). Anybody have experience with this? I can't seem to find much documentation about the box or even much about running OMV on it. I recently acquired an HP Proliant Microserver Gen7 and I was considering installing OMV on it.
